Ingredients
- 4 baby cos, cut into quarters 
- Squeaky Gate extra virgin olive oil 
- salt 
- 8 streaky bacon rashes 
Dressing
- 2 tbsp chipotle in adobo sauce 
- 1 cup mayonnaise 
- ¼ cup buttermilk 
- 1 tsp smoked paprika 
- 1 lime, juice 
- ¼ bunch coriander, chopped 
- ½ cup plain corn chips, crushed 
- extra chopped coriander to garnish 
Method
- Drizzle the lettuce with oil and season with sea salt. Cook on the bbq until the cut sides are charred. 
- Cook the bacon until super crispy then chop into fine strips. 
- In a bowl mix together the dressing ingredients. Taste and season with salt if needed.
